Shipton Mill’s 100% Strong Wholemeal Flour is a premier choice for bakers seeking the perfect balance of nutrition, strength, and flavor. Milled in Gloucestershire, this flour is crafted from a carefully selected blend of organic Canadian and English hard wheats. The Canadian grain provides the high protein density needed for a powerful rise, while the English wheat contributes a characteristic sweetness and local provenance.
Because it is a strong flour with a 12% to 15% protein content, it is exceptionally well-suited for yeasted breads, sourdoughs, and long fermentation processes. Unlike standard wholemeal flours, this strong variety produces a more elastic dough that can support a heavy crumb, resulting in a loaf that is hearty but not overly dense. It is unbleached and free from synthetic additives, ensuring that the natural wheatgerm and bran remain intact for maximum dietary fiber and flavor.
This 16kg bulk sack is a cost-effective staple for small-scale bakeries, community kitchens, or prolific home bakers. Certified by the Soil Association, it represents a commitment to regenerative farming practices that protect soil health. Whether used on its own for a 100% wholemeal loaf or blended with white flour to add a rustic "speckled" character to baguettes and rolls, this flour is a reliable, high-performance artisanal essential.
